We were pretty pleased when El Dorado chose Island bar to host the Midlands heat for their swizzle competition…and we were even more excited when one of our very own jointly won the heat!
Edd Fish’s winning rum based cocktail, inspired by the national drink of Guyana, was served in a hollowed out pineapple and garnished with a flaming collection of fruits. It wowed the judges with its carefully balanced ingredients and passionate service. Edd, or Captain Fishcake as he is known at the bar, used his extensive knowledge of rum having recently taken over as the main bartender at Island’s upstairs Tiki bar, which is open Friday and Saturday nights.
The national competition, which sees bar tenders from around the country compete making swizzle style cocktails which are mixed using a stirrer, will take place in London during August. Regional heats have been held in London, Manchester and Reading, as well as Birmingham.
